Description
Just an apple pie in granola form! So delicious to snack on or for breakfast.

- 2 cups gluten free old fashioned rolled oats
- 1/4 packed brown sugar
- 1/2 cup pecans
- 1/2 cup almonds
- 1/2 honey crispy apple, small diced
- 1 large pinch of salt (around 1/4 teaspoon)
- 3 teaspoons apple pie spice
- 4 tablespoons real maple syrup (divided in half)
- 1/4 cup melted coconut oil
- 1/2 cup apple sauce
- 1 teaspoon vanilla extract
- 1 teaspoon vanilla bean paste (optional but encouraged)
Instructions
- Preheat your oven to 350F.
- Mix together the oats, brown sugar, pecans, almonds, diced apple and salt together in a large bowl.
- In another bowl, combine 2 tablespoons maple syrup, melted coconut oil, apple sauce, vanilla extract and vanilla bean paste together. When combine, pour the wet mixture into the dry oats mixture.
- Mix together but folding over with a rubber spatula or wooden spoon until everything is combine and the oats are coated.
- Pour the granola mixture onto a baking sheet tray. Spread out to cover the entire pan and so the granola is in a thin layer.
- Bake for 15 minutes. Remove and toss and turn the granola over. Spread out again to cover the entire pan.
- Bake for 15 more minutes. Remove and toss and turn the granola over. Spread out again to cover the entire pan. Bake for 8 more minutes and remove from the oven. It should be toasted brown and drying out.
- Remove from the oven and pour the remaining 2 tablespoons maple syrup over the granola and let sit until cooled.
- Mix and store in a glass container.
