Pork Belly Chili Spiced Brussels Sprouts

Ingredients
- 1/2 –3/4 lb. pork belly, cut into 1/2 inch cubes
- 1 lb. brussels sprouts, trimmed and quartered
- 1 tablespoon smoked paprika
- 1/2 teaspoon each salt and ground black pepper
Instructions
- Preheat your oven to 425F. Place a baking sheet tray in the oven while it preheats.
- Toss the brussels sprouts, smoked paprika, salt and pepper in a bowl to combine and coat.
- When the oven is up to temperature, remove the baking sheet tray and add the cubed pork belly to it. Spread out so that all pieces are touching the pan. Roast for 5 minutes.
- Remove the sheet tray from the oven and add the brussels sprouts to the pan. Mix around to combine with the pork belly.
- Place the baking sheet tray back into the oven for 8-12 minutes or until the brussels are tender, slightly brown color and smell amazing.
- Remove from the oven and serve.
Notes
Optional to garnish them with more smoked paprika and salt before serving.
If you can’t find pork belly, us thick cut bacon.
