I absolutely love this salad.
 
Raw broccoli is coated with a simple lemony mayo based dressing – with the bite of apple cider vinegar. I love the crispy bacon bites and the soft chewy figs. The pops of red onion and crunchy sunflower seeds and cashews.
 
Gosh, it’s a good one!
 
It’s even great the next day – but I doubt it will last that long. Meal prep this for lunch or a quick dinner side.

This salad is based off of a grocery store version.

Whole Foods has an amazing Broccoli Crunch salad. They serve it in their prepared foods section.

This salad is totally inspired from the first time I tried it.

I knew I had to make it my own. I changed it up – of course. Using avocado mayo, sunflower seeds and lots of bacon bits. 

It tastes so much like it – I could have it 4 times a week for lunch!

Description

Raw broccoli coated in the best avocado mayo dressing. Simple & quick meal on the go.


Ingredients

Scale
  • 1 large broccoli head, rinsed and cut into small bite sized pieces
  • 4 thick cut slices bacon, chopped and cooked until crispy
  • 2 tablespoons raw or roasted sunflower seeds
  • 3/4 cup roasted cashews
  • 4 figs, chopped
  • 1 tablespoon red onion, minced
  • 1/2 avocado mayo
  • 1-2 tablespoons apple cider vinegar
  • 1 teaspoon poppy seeds
  • 1 pinch salt
  • 1 pinch pepper
  • zest of 1/2 lemon


Instructions

  1. In a medium sized bowl, place the broccoli, bacon, sunflower seeds, figs and red onions.
  2. Using a small bowl, make the dressing. Combine the mayo, vinegar, poppy seeds, salt, pepper and lemon zest. Using a fork or small whisk, combine all ingredients together.
  3. Pour the dressing over the bowl of broccoli. Toss with tongs or a spoon to coat the broccoli with the dressing and to combine all ingredients.
  4. Serve at once or let sit over night for more developed flavors. Enjoy within 3 days.
