Healthy Gluten Free Morning Banana Blueberry Oat Muffins

With my simple staple muffin recipe – I just had to change it up with some flax, oats, minimal sugar and gluten free flour.

I just love muffins. Cut them in half, grill the sides, slather some butter and sip your coffee. So good. 

I over filled my 6 muffin cups; the batter is thick so it won’t run over. They puff up nicely and stay together without many crumbs. Dense from the flax and oats but juicy from the blueberries and brown sugar.

Let's eat more fiber!

Adding Flax meal into these muffins, makes the hearty, gives them texture and dare I say, gives us great fiber and healthy fat. 

I love flax meal because it’s gluten free – unlike whole wheat flour – it gives a similar texture and taste but keeps it gluten free.

Healthy Gluten Free Morning Banana Blueberry Oat Muffins

Ingredients

Scale
  • 2 very ripe bananas, mashed
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup gluten free flour blend
  • 1/2 cup ground flax meal
  • 2 teaspoons baking powder
  • 1 1/4 teaspoon salt
  • 1 heaping teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 cup gluten free oats
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 350F. Generously grease a 6 muffin pan and set aside.
  2. Whisk together the bananas, brown sugar, egg and vanilla extract in a large mixing bowl. Combine until smooth and there are very little banana bumps.
  3. In another bowl, combine the flour blend, flax meal, baking powder, salt, cinnamon, baking soda and oats.
  4. Gently fold in the dry ingredients into the banana mixture until just combine. Fold in the blueberries.
  5. Spoon the batter evenly into the prepared muffin cups.
  6. Bake for 18 minutes or until a toothpick comes out clean when inserted into the center. Remove from the oven and let cool for 5 minutes before removing from the muffin tin.
