Gluten Free Brown Butter Chocolate Blondies with Butterscotch
When a recipe has 11 tablespoons of BUTTER – you KNOW it’s going to be good. I mean for real!!!
I’ve made these a few times – the brown butter gets me every time. I love the richness of the brown sugar, along with Bob Red Mill’s gluten free flour blend and chocolate chips…AND MORE sprinkled on top!
While, certain individuals in my house love sweets – this was perfect for them – I love a tiny bite here and there. These are sweet! They remind me of the Coconut Butterscotch Magic Bars I made around the holidays…SWEET!

Gluten Free Brown Butter Blondies with Dark Chocolate + Butterscotch

Ingredients
- 11 tablespoons butter, divided in half, room temperature
- 1 1/2 cups packed brown sugar
- 2 large eggs, room temperature
- 2 teaspoon vanilla paste or extract
- 1 3/4 cup gluten free flour blend
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup chocolate chips, plus more for topping
- (If desired) 1/2 cup butterscotch chips for topping
Instructions
- Preheat your oven to 350F. Place parchment paper in a 13×6 baking pan and set aside.
- In a small saucepan, melt 5 1/2 tablespoons of butter. Swirl around and cook until it is toasted brown. Add in the brown sugar. Quickly stir to combine. Make sure not to burn it and remove it right away from the stove.
- Using a mixing bowl, combine the browned butter, brown sugar and the remaining room temperature butter. Mix with a rubber spatula or wooden spoon until combine. Add in the eggs, one at a time. Mix until everything is just combined. Stir in the vanilla.
- Add the flour, baking powder and baking soda to the butter and sugar bowl. Stir until just combined. Stir in 1 cup chocolate chips.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 15-18 minutes or until the center is cooked through. Remove from the oven. Sprinkle some chocolate chips and butterscotch chips on top (if desired) and cool on a wire rack. Cut into bars and serve.
