Maple Blackberry Arugula Salad with Herb Goat Cheese
I made this salad for a client dinner and I made a little extra. I was so happy to grab a small plate of this and enjoy it to myself.
The peppery bite of the earthy arugula with the vibrant radicchio goes well with the sweet dressing. The texture of the walnuts, avocado, blackberries and that goat cheese. Love it all together.
Unexpected flavors together that go deliciously well.
The dressing is simple and mixes up quickly in a jar with a lid. Just combine and shake.
When to serve sweeter salads...
Salads with fruit tend to be sweeter (although I love the sweet and savory combination). I like serving them in smaller portions – this salad is a great appetizer, or to accompany a heavier entrée.
Some people just aren’t sweet salad lovers. I can understand. I’m usually the savory type but this salad just screams Spring and Summer.
If you want to serve this salad as a lunch or lighter dinner option – grilled up some fish or chicken to serve along with it.
This is the perfect salad to serve outside, enjoying the nicer temperatures in the evening. I’m all about meals outside – and this one is the one!
Try these salads too!
