Simple Chicken Ginger Curry with Baby Bok Choy
I love a good curry. I love the different flavors, creamy coconut milk and crunchy vegetables.
It’s comforting, healthy and filling all at the same time. Serve with jasmine rice or garlic naan for dipping – because dipping into the broth is AMAZING!!
This is such a simple recipe and it doesn’t take too long to make either. Its a great meal to have during the week – with leftovers!
More soups you will love.

Really enjoyed this- used shredded carrots with good success and left out the peas. A squirt of lime juice finished everything off nicely. Thanks for sharing!
