Broccoli Crunch Salad with Figs & Bacon
This salad is based off of a grocery store version.
Whole Foods has an amazing Broccoli Crunch salad. They serve it in their prepared foods section.
This salad is totally inspired from the first time I tried it.
I knew I had to make it my own. I changed it up – of course. Using avocado mayo, sunflower seeds and lots of bacon bits.
It tastes so much like it – I could have it 4 times a week for lunch!

Description
Raw broccoli coated in the best avocado mayo dressing. Simple & quick meal on the go.
Ingredients
- 1 large broccoli head, rinsed and cut into small bite sized pieces
- 4 thick cut slices bacon, chopped and cooked until crispy
- 2 tablespoons raw or roasted sunflower seeds
- 3/4 cup roasted cashews
- 4 figs, chopped
- 1 tablespoon red onion, minced
- 1/2 avocado mayo
- 1–2 tablespoons apple cider vinegar
- 1 teaspoon poppy seeds
- 1 pinch salt
- 1 pinch pepper
- zest of 1/2 lemon
Instructions
- In a medium sized bowl, place the broccoli, bacon, sunflower seeds, figs and red onions.
- Using a small bowl, make the dressing. Combine the mayo, vinegar, poppy seeds, salt, pepper and lemon zest. Using a fork or small whisk, combine all ingredients together.
- Pour the dressing over the bowl of broccoli. Toss with tongs or a spoon to coat the broccoli with the dressing and to combine all ingredients.
- Serve at once or let sit over night for more developed flavors. Enjoy within 3 days.
