Description

This simple romaine side salad with lemon, olive oil, shallots, and parmesan is the perfect easy salad to serve with chicken, fish, or steak.


Ingredients

Units Scale
  • 4 tablespoons olive oil
  • juice from 1 lemon
  • 2 tablespoons shallots, minced
  • 1/2 teaspoon red pepper flakes
  • large pinch of each sea salt and black pepper (more to taste)
  • 2 heads romaine lettuce, finely chopped
  • 1/2 cup freshly grated Parmesan cheese (more if desired)

Instructions

  1. In a salad bowl, whisk together the olive oil, lemon juice, shallots, red pepper flakes, salt and pepper.
  2. Add in the chopped romaine lettuce and toss to coat.
  3. Sprinkle the grated Parmesan cheese on top. Toss again to fully combine and coat the lettuce. Serve.

Notes

  • Use fresh lemon juice — not bottled. It makes a noticeable difference.

  • And don’t skimp on the parmesan. It ties everything together.
