Description

This gluten-free protein brown bread is moist, hearty, and easy to make. Made with blended cottage cheese for hidden protein and tender texture.


Ingredients

  • 1 1/4 cups gluten free flour blend (I used this brand)
  • 1/2 cup ground flax seeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or sugar
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons salted butter, cut into 8 small squares

Instructions

  1. Preheat your oven to 350 degrees. Line a loaf baking pan with parchment paper and set a side.
  2. In a large bowl, combine the gluten free flour, flax seeds, baking powder, baking soda and salt. Set aside.
  3. Using a stand blender or hand immersion blender, blend the cottage cheese and eggs together until smooth. Pour this into the dry mixture bowl. Add in the honey or sugar and melted coconut oil.
  4. Using a rubber spatula, mix to combine until everything is fully incorporated and you can’t see any dry ingredients anymore (The bread dough will be very thick)
  5. Add the dough into your prepared loaf pan. Place the butter pieces around the top of the dough.
  6. Bake for 35 minutes or until the middle is set and a toothpick comes out clean – the top should be lightly brown.
  7. Remove from the oven and let cool on a wire rack. It’s best to let it cool completely before you slice into.

Notes

  1. Once completely cooled, you can freeze the whole loaf. Wrap tightly in foil or plastic wrap and then placed in a ziploc bag. Thaw on your countertop  before slicing into.
