Gluten Free Crispy Buffalo

If you’ve ever hovered over a tray of buffalo chicken at a party like a protective hawk — same. The problem? Most versions are gluten-loaded and deep fried into oblivion. My version? Crispy, oven-baked, gluten free, wildly snackable, and weeknight doable. Because we’re not here for sad “diet food.” We’re here for loud, crunchy, sauce-dripping joy.
These Crispy Buffalo Chicken Bites use boneless chicken thighs (more flavor, more forgiveness), gluten free panko, high heat roasting, and a quick broil finish for that golden outside. Toss in buffalo sauce, serve with something green to look responsible, and don’t forget the blue cheese dressing (or caesar – trust me, it’s good).

Ingredients
- 1½ pounds boneless skinless chicken thighs, cut into bite-size pieces
- Gluten free panko breadcrumbs
- Garlic powder
- Onion powder
- Salt
- Black pepper
- Olive oil or Avocado oil spray or drizzle

- Your favorite buffalo sauce (this is the one I use – it’s paleo – so gluten and dairy free)
- Blue cheese or ranch dressing for dipping

Description
Crispy gluten free buffalo chicken bites made with chicken thighs and GF panko. Oven baked, ultra crunchy, and perfect for dinner or game day.
Ingredients
- Avocado or Olive oil spray
- 1-2 pounds of boneless chicken thighs, cut into 2 inch pieces & patted dry with a paper towel
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon each sea salt and black pepper
- 1/2-2/3 cup gluten free panko bread crumbs
- 1 cup (or more) buffalo sauce
- blue cheese dressing (for dipping)
Instructions
- Preheat your oven to 425F. Spray a baking sheet tray with avocado or olive oil.
- In a mixing bowl, toss the chicken with the garlic powder, onion powder, salt and pepper. Arrange the chicken pieces on the prepared baking sheet tray. Move the pieces so there is some room between them and they aren’t in a pile. Sprinkle the panko breadcrumbs on top of the chicken pieces.
- Bake in the oven for 10-12 minutes. Turn the broiler on high and cook an additional 4 minutes or until toasted brown (remember to watch the chicken when your broiler is on to make sure it doesn’t burn)
- Remove from the oven and drizzle the buffalo sauce on the chicken. Serve hot with additional buffalo sauce, if desired.
