Ginger Chicken Lettuce Cup Salad
I love light and fresh salads that double has a protein filled lunch.
This salad is just that. With the ginger, shallot and sesame flavors – I just wish I had some bread.
The chicken soaks up the dressing and all the raw vegetables add the right amount of crunch and texture you want in a salad.
Dress it all up.
I like to dress the shredded chicken before I place it on the greens.
THEN you can spoon more of the ginger dressing on top of the greens.
The dressing coats the chicken perfectly – makes it stay even more moist and delicious.
Top it all off with freshly ground black pepper.

Description
Sweet and a hint of spice with tender bib lettuce and moist chicken.
Ingredients
- 2 heads bib lettuce, gently torn
- 1/2 cup radicchio or red cabbage, sliced thinly
- 1 1/2 cups rotisserie chicken (or leftover grilled or poached)
- 1 carrot, shredded
- 1 small handful of each sugar snap peas, cocktail or mini cucumbers and radishes, sliced thinly
Ginger Shallot Dressing
- 1 small shallot, minced
- 1 heaping teaspoon fresh ginger, minced
- 1/3 cup olive oil
- 1 teaspoon Dijon mustard
- juice from 2 lemons
- 1/2 teaspoon sesame oil
- 1/2 teaspoon sesame seeds
- 1 pinch red pepper flakes
- a large pinch of each salt and pepper
Instructions
- Mix together the dressing ingredients in a small glass jar with a lid. Shake it up to fully combine.
- Place the shredded chicken in a small bowl and toss with a few tablespoons of the dressing.
- Using a large shallow bowl or individual serving plates, arrange the lettuce and radicchio around the plate. Place the carrots, snap peas, cucumbers and radishes throughout the lettuce.
- Place the chicken around and drizzle with another tablespoon or so of dressing. Sprinkle with sesame seeds and fresh ground pepper.
