Description
These chicken caesar smash tacos are gluten free, easy, and ready in 10 minutes. A kid-friendly weeknight dinner made with simple ingredients.

- 1 lb. ground chicken
- 1/2 teaspoon each garlic powder and onion powder
- 1/4 teaspoon each salt and black pepper
- about 8 corn tortillas (or the tortilla of your choosing)
- 1 head romaine lettuce, thinly chopped
- 3 tablespoons of your favorite Caesar dressing (amount depends on how you like your lettuce dressed)
- 1/4 cup grated Parmesan cheese
- optional: a pinch of red pepper flakes (just to add a hint of heat/spice, if you like that)
Instructions
- Heat up a skillet over medium/high heat.
- While your pan is heating up, combine the ground chicken, spices, salt and pepper together in a mixing bowl. Combine with a fork or your hands until fully combined.
- I like to work in groups of 2’s for this recipe. Arrange 2 tortillas on a cutting board, plate or flat surface. Add 2 heaping tablespoons to the middle of the tortillas and push out to the sides to create a thin patty or layer. Add more or remove some of the ground chicken mixture if needed.
- Add the patty and tortilla to the heated skillet, chicken side down. Let cook for around 2 minutes or until the underside is browned. Flip over and cook for another 2 minutes or until the tortilla is toasted brown and the chicken is cooked through. Repeat until all the chicken mixture is used.
- Mix the chopped lettuce and Caesar dressing together in a mixing bowl. Add a small amount of the lettuce to the top of each smashed taco. Sprinkle Parmesan cheese on top and garnish with red pepper flakes, if using.
