Cacao Chip Paleo Cookies

Cacao Chip Paleo Cookies

Updated recipe

Paleo cookies do exist.  Yes. Made with coconut sugar, almond butter and cacao chips! So good. A super short ingredients list is always nice – and guess what? Just dump all the ingredients into your mixing bowl. Mix on low for 10 seconds and they are ready. They are that easy to prepare.

I love how melted almond butter tastes and along with a hint of cacao and cacao chips – they are just sweet enough. I’ll take 6 of them.

Pro Tip. Double it or triple it.

In all honesty, the recipe doesn’t make enough cookies. So I usually double if not triple the recipe.

It’s a basic ratio of ingredients – plus on the recipe below you can change the scale of the recipe 1X 2X or 3X

Such a useful tool to have because more cookies are better than less.  They freeze great too, best enjoyed right away of course.

Ingredients

Scale
  • 1 cup almond butter, mixed up if separated
  • 1 heaping teaspoon cacao powder
  • 1 cup coconut sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
  • 1 cup cacao chips

Instructions

  1. Preheat your oven to 350F. Prepare a baking sheet with parchment paper and set aside.
  2. In a medium stand mixing bowl, add all the ingredients together. Mix on low until all ingredients are fully incorporated – about 10 seconds. Make sure that you don’t see chucks of almond butter – you want it smooth cookie batter.
  3. Using a small spoon or scoop – scoop the batter onto a baking sheet pan. Space them about 2-3 inches apart. Using your fingers, press the cookie balls down slightly – this is an important step.
  4. Bake for 8 minutes and remove from oven. Let cool 1-2 minutes on the baking sheet, then transfer to a cooling rack.
