Gluten-Free Green Bean Casserole
for Thanksgiving

holiday favorite

There are certain Thanksgiving sides people expect to see on the table every single year. Mashed potatoes, stuffing, cranberry sauce, and of course, green bean casserole. But can we agree that some versions of this classic could use a little help?

This gluten-free green bean casserole skips the canned soup and uses fresh green beans, golden mushrooms, and a simple homemade creamy sauce. Then comes the good part: crispy onions mixed with Parmesan cheese that turn golden in the oven. It’s familiar enough for the traditionalists at your Thanksgiving table, but with a few upgrades that make it so much better.

The Secret to a Better Gluten-Free Green Bean Casserole

Fresh green beans. That’s where I start.

I like them tender but with a little bite left, not so soft that you need a spoon to find them. A quick four-minute blanch in salted water does the trick, followed by a rinse under very cold water to stop the cooking.

They’ll finish cooking in the oven, so there’s no reason to cook them completely beforehand.

Homemade Mushroom Sauce Without the Canned Soup

I’m all for shortcuts, especially during Thanksgiving, but the homemade mushroom sauce is worth the extra few minutes.

Brown the mushrooms in butter until they develop those golden edges, then add garlic, thyme, gluten-free flour, broth, milk, and a little tamari. The tamari adds that savory depth that makes the sauce taste like it’s been cooking much longer than it actually has.

It’s creamy, rich, and made with ingredients you can pronounce. And unlike some traditional casseroles, you know exactly what’s going into it.

Crispy Parmesan Onions Make This Thanksgiving Side Better

I’m not asking anyone to fry their own onions on Thanksgiving morning. We have enough going on.

Grab a bag of store-bought gluten-free crispy onions, mix them with freshly grated Parmesan, and scatter them over the casserole before baking.

The Parmesan gets golden, the onions get extra crunchy, and suddenly this classic Thanksgiving side has a topping worth fighting over.

Make This Easy Thanksgiving Side Ahead of Time

When I’m cooking for a holiday, I want as much done ahead of time as possible. There’s already enough happening in the kitchen without trying to make six different Thanksgiving sides at the last minute.

You can blanch the green beans and make the mushroom sauce a day ahead. Store them separately in the refrigerator, then assemble the casserole when you’re ready to bake.

Save the crispy onion-Parmesan topping until just before it goes into the oven. Nobody wants soggy onions.

Chef’s Note

The mushroom sauce should look slightly thicker than you think it needs to before baking. The green beans will release a little moisture in the oven, so starting with a thicker sauce keeps the finished casserole creamy instead of watery.

And don’t rush browning the mushrooms. Let them sit in the skillet long enough to develop some color. That’s where a lot of the flavor comes from.

Instructions

  1. Preheat the oven to 400°F. Lightly butter or grease a 2½-quart baking dish.
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 4 minutes. Drain and rinse under very cold water to stop the cooking.
  3. Melt the butter in a large skillet over medium-high heat. Add the mushrooms and cook for 7–8 minutes, stirring occasionally, until deeply browned.
  4. Add the garlic, thyme, salt, and pepper. Cook for 30 seconds, until fragrant.
  5. Sprinkle the gluten-free flour over the mushrooms and cook for 1 minute, stirring. If using tapioca starch instead, whisk it with a little cold broth and add it with the remaining liquids.
  6. Slowly stir in the broth and milk. Add the tamari and simmer for 3–5 minutes, stirring occasionally, until the sauce is thick enough to coat the back of a spoon.
  7. Fold in the green beans and transfer everything to the prepared baking dish.
  8. In a small bowl, combine the gluten-free crispy onions and Parmesan. Scatter evenly over the casserole.
  9. Bake for 16–20 minutes, until the sauce is bubbling and the topping is golden brown. Let rest for a few minutes before serving.
