Sweater Weather Is Here:
Make These 6 Cozy Dinners
The first cool evening hits and suddenly I want nothing to do with a salad.
Give me something simmering, roasting, or bubbling away in a skillet. These cozy fall dinner recipes are exactly what I start craving when sweater weather finally shows up: warm, comforting meals that make the house smell amazing and, maybe even better, give me really good leftovers for tomorrow.
Here are six I’ll be making on repeat.
Yes, 20 cloves of garlic. No, we’re not cutting back.
The garlic gets soft and mellow while the chicken roasts with shallots, giving you juicy chicken tonight and plenty left for salads, sandwiches, wraps, or quick dinners tomorrow.
Perfect for: Sunday dinner that quietly handles Monday lunch too.
Tiny meatballs, vegetables, greens, and a cozy broth make this one of those soups I could eat all fall and winter.
Make a big pot because the leftovers are exactly what you’ll want waiting in the refrigerator when it’s cold outside and lunch needs to happen.
Perfect for: Soup season, meal prep, and grabbing a bowl between everything else you’re doing.

Tender beef, rosemary, and sun-dried tomatoes create a rich, savory stew that gets even better after a night in the refrigerator. That’s my favorite kind of cooking: make dinner once, enjoy it twice.
Perfect for: Cold nights and next-day lunches that don’t feel like leftovers.
I want pot pie. I do not necessarily want to make an actual pie after cooking for clients all day.
This one-pan version gives you that creamy beef-and-leek comfort food situation without turning dinner into a project. And yes, I will happily reheat it tomorrow.
Perfect for: When you need serious comfort food but it’s still a weeknight.
Salmon gets the sweater-weather treatment with a creamy sun-dried tomato sauce that feels cozy without being ridiculously heavy.
Serve it with pasta, rice, potatoes, or something green, then save any extra salmon for tomorrow’s lunch.
Perfect for: When you want comfort food but still want something a little lighter.
Brown butter and butternut squash already had me. Add spicy garlic basil pork and we’re done here.
It’s sweet, savory, a little spicy, and full of those fall flavors I start craving the second the temperature drops.
Perfect for: Busy weeknights and meal-prep bowls the next day.
Cozy Dinner Tonight. Really Good Lunch Tomorrow.
These cozy fall dinner recipes are the meals I want when the evenings get cooler and staying home sounds considerably better than going anywhere.
And if I’m already cooking, I want tomorrow’s lunch handled too. That’s why I love recipes like these. Make enough for leftovers, put on the sweater, and consider at least one decision for tomorrow already made.
Now tell me: which recipe immediately says sweater weather to you?
Chef's Note
If you’re intentionally cooking for leftovers, portion them out before everyone goes back for seconds. I know this sounds slightly aggressive, but I’ve learned my lesson. Nothing ruins your beautifully planned Tuesday lunch faster than discovering someone finished it at 9 p.m.
