Make These 6 Dinners

Six easy gluten-free pasta dinners including Tikka Masala Chicken Pasta, Cottage Cheese Alfredo, Calabrian Gnocchi, zucchini pasta, vodka pasta, and coconut curry noodles.

When my favorite gluten-free pasta is on sale, I buy more than one box. Always.

It lasts forever in the pantry, everyone in my house will eat it, and having a few boxes sitting there makes the 5 p.m. what am I making for dinner? situation considerably less threatening. Add a good sauce, some vegetables, maybe a protein, and we’re in business.

These are six pasta dinners I make on repeat when I want something easy, comforting, and really freaking good.

Chicken tikka masala meets pasta, and I’m not pretending it’s traditional. Tender spiced chicken and gluten-free pasta get tossed in a creamy coconut tomato sauce with lots of cilantro.

It’s cozy, saucy, and exactly what I want when regular pasta night needs a little personality.

Perfect for: When you can’t decide between takeout and pasta.

This is one of my favorite ways to turn a box of pasta into a quick, protein-packed dinner. Cottage cheese, Parmesan, garlic, and milk get blended into a silky Alfredo sauce that comes together while the pasta cooks.

Add grilled chicken, shrimp, meatballs, or absolutely nothing. It’s good either way.

Perfect for: Soccer nights when dinner needs to happen FAST.

This one feels slightly fancy but requires very little actual effort, which is pretty much my ideal dinner situation.

Brown butter, golden zucchini, and fresh carrot top pesto turn a simple box of gluten-free pasta into something I would happily order at a restaurant.

And we’re using the carrot tops instead of throwing them away. Look at us being resourceful.

Perfect for: Summer produce and cleaning out the vegetable drawer.

Creamy tomato sauce, sun-dried tomatoes, Parmesan, and gluten-free pasta. There’s not much convincing required here.

It’s rich without being ridiculous and tastes like you put considerably more work into dinner than you actually did.

Perfect for: Friday night pasta without the restaurant bill.

Bacon, chicken, pasta, and a creamy, cheesy sauce. I don’t think I need to work very hard to sell you on this one.

It’s cozy, packed with protein, and exactly the kind of pasta I want after a long day when a salad simply isn’t going to cut it.

Perfect for: When you want serious comfort food and everyone at the table is hungry.

Just Buy the Extra Box

Gluten-free pasta can get expensive, so when a brand I actually like goes on sale, I’m stocking up. A few boxes in the pantry mean I’m never too far away from dinner, whether I’m craving something cheesy, spicy, creamy, packed with vegetables, or somewhere in between.

So next time you see your favorite gluten-free pasta on sale, grab an extra box or two.

Chef's Note

Gluten-free pasta can go from perfectly cooked to falling apart remarkably fast. I usually cook mine just shy of the package directions, save some pasta water, and finish the noodles directly in the sauce.

And please save that pasta water. It’s free sauce insurance.
