20-Minute Peanut Beef Noodles

There are nights when I feel like cooking.

And then there are nights when I’ve already cooked all day for clients, unloaded the groceries, answered seventeen “What’s for dinner?” questions, and suddenly everyone’s hungry… again.

This is the recipe I make for those nights.

It’s saucy, comforting, packed with protein, and comes together in less than 20 minutes. Better yet? The sauce only takes four ingredients and gets blitzed together in the blender while the noodles cook.

Dinner doesn’t get much easier than that.

This is one of those dinners I keep in my back pocket because I know it will save me on a busy night. If you’ve got hungry kids, a long day at work, or zero motivation to cook, make this one. And don’t be surprised when someone asks if you can make it again next week.

Plus it’s easy on the budget. Ground beef is a great cut to use to extend a meal and goes the distance when serving a lot of people.

The Sauce Is Doing All the Work

Can we take a moment to appreciate recipes where one simple sauce carries the entire meal?

This peanut sauce is creamy, savory, just a little sweet, and coats every single noodle. No standing over the stove adding twelve different ingredients.

Just throw everything into a blender, press the button, and let it do its thing.

That’s the kind of cooking I can get behind on a Wednesday (or really any day of the week).

Ground Beef Keeps Saving Dinner

Ground beef deserves more credit.

It’s affordable, cooks in minutes, and almost everyone will eat it without complaint. I keep a pound in the refrigerator or freezer almost every week because I know it can become tacos, burgers… or these peanut noodles.

It’s one of those ingredients that quietly makes life easier.

Dinner in Under 20 Minutes? I'll Take It.

This recipe is proof that dinner doesn’t have to be complicated to be good.

Brown the beef. Cook the noodles. Blend the sauce. Toss everything together.

Done.

That leaves more time to sit outside, help with homework, or simply enjoy ten uninterrupted minutes before someone asks where the snacks are.

The Bottom Line

Description

These gluten-free peanut beef noodles are made with a simple 4-ingredient peanut sauce and rice noodles for an easy, high-protein dinner in under 20 minutes.


Ingredients

  • 1 lb. ground beef (I like to use 90% - but 85% works great too)
  • 1/4 cup (or around 1/4 of) yellow onion, small diced
  • 4 garlic cloves, minced
  • 1 teaspoon tapioca powder
  • 2 tablespoon soy sauce or liquid aminos
  • 2 tablespoons brown sugar
  • 2-3 red lunchbox peppers or 1/2 of a red bell pepper, small diced
  • 5 oz. wide rice noodles (I like these best), cooked according to package instructions - quickly rinsed with cold water to stop them from cooking further
  • 1 scallions, thinly sliced

Quick Blender Peanut Sauce

  • 1/2 cup peanut butter
  • 1 garlic clove
  • 1 tablespoon sesame oil
  • 1/4 cup soy sauce or liquid aminos
  • 1/4-1/3 cup hot water
Blend everything in a blender - add 1/4 cup hot water first and slowly add more water to reach a smooth soup like consistency.

Instructions

  1. Cook the ground beef and onion in a skillet over high heat. Break the meat up as it cooks so that it’s in very small pieces. When the meat is almost finished cooking, add in the minced garlic. Cook until all the meat is no longer pink. Turn the heat off and drain any fat from the pan.
  2. Stir in the tapioca powder, soy sauce and brown sugar. Sprinkle the red pepper dices on top.
  3. In a large mixing bowl, add the cooked noodles and 3/4 of the peanut sauce. Toss with tongs so the noodles are coated.
  4. To serve, you can either mix the beef in with the noodles or serve it on the side. Serve additional sauce on the side. Garnish with sliced scallions.

Notes

Be sure to drain any fat out of the pan after you cook the ground beef.

I like to cook the gluten free rice noodles while the ground beef is cooking – make sure to run cold water through the noodles quickly to stop them from cooking further.

While the noodles and beef are cooking you can blend the quick peanut sauce in the blender so its ready to go when everything is finished cooking.
