If Summer Dinner Feels Hard,
Make These 4 Easy Bowls
Summer is supposed to feel easy. Dinner? Not always.
Between camps, soccer practices, vacations, late sunsets, and trying to avoid turning on the oven, dinner can start feeling like one more thing on an already full plate.
That’s exactly why I keep coming back to bowls.
They’re quick, customizable, budget-friendly, packed with protein, and come together in less than 30 minutes. Even better, they’re built with ingredients you probably already know and love.
These are the 4 bowls I won’t stop making this summer.
1. High Protein Chicken Shawarma Bowls
Tender chicken coated in warm shawarma spices, served over rice or cauliflower rice with crisp vegetables, creamy sauce, and all the toppings. This bowl feels fresh, filling, and surprisingly easy for a weeknight dinner.
"These four recipes are healthy, packed with protein, budget-friendly, and simple enough for even the busiest weeknights. They're the meals I find myself making over and over because they work for real life."

2. Simple Soy Glazed Salmon & Quinoa Bowls
Sweet, salty, and packed with protein. This salmon cooks quickly and pairs perfectly with fluffy quinoa and fresh vegetables. It’s one of those meals that feels healthy without feeling like you’re trying to eat healthy.
Bonus: leftovers make an excellent lunch the next day.

3. Greek Inspired Ground Beef + Feta Bowls
Ground beef is one of my favorite budget-friendly proteins because it’s affordable, versatile, and cooks fast. Add rice, cucumbers, tomatoes, feta, red onion, and a simple dressing and you’ve got a dinner that everyone can customize their own way.
4. Chicken Banh Mi Rice Bowls
Everything you love about a banh mi sandwich in bowl form. Flavorful ground chicken, rice, crunchy vegetables, fresh herbs, and a simple sauce come together for a meal that’s bright, fresh, and full of texture. This one never lasts long in my house.
Summer is not a time to overthink.
When summer dinner feels hard, don’t overthink it.
A good bowl solves a lot of problems.
Pick one, make it this week, and let dinner be the easy part.
