Description

These chicken caesar smash tacos are gluten free, easy, and ready in 10 minutes. A kid-friendly weeknight dinner made with simple ingredients.


Ingredients

  • 1 lb. ground chicken
  • 1/2 teaspoon each garlic powder and onion powder
  • 1/4 teaspoon each salt and black pepper
  • about 8 corn tortillas (or the tortilla of your choosing)
  • 1 head romaine lettuce, thinly chopped
  • 3 tablespoons of your favorite Caesar dressing (amount depends on how you like your lettuce dressed)
  • 1/4 cup grated Parmesan cheese
  • optional: a pinch of red pepper flakes (just to add a hint of heat/spice, if you like that)

Instructions

  1. Heat up a skillet over medium/high heat.
  2. While your pan is heating up, combine the ground chicken, spices, salt and pepper together in a mixing bowl. Combine with a fork or your hands until fully combined.
  3. I like to work in groups of 2’s for this recipe. Arrange 2 tortillas on a cutting board, plate or flat surface. Add 2 heaping tablespoons to the middle of the tortillas and push out to the sides to create a thin patty or layer. Add more or remove some of the ground chicken mixture if needed.
  4. Add the patty and tortilla to the heated skillet, chicken side down. Let cook for around 2 minutes or until the underside is browned. Flip over and cook for another 2 minutes or until the tortilla is toasted brown and the chicken is cooked through. Repeat until all the chicken mixture is used.
  5. Mix the chopped lettuce and Caesar dressing together in a mixing bowl. Add a small amount of the lettuce to the top of each smashed taco. Sprinkle Parmesan cheese on top and garnish with red pepper flakes, if using.
