Gluten-free Protein Brown Bread
(Quick bread recipe)

protein | low sugar | freezes well

Let’s talk about brown bread.

Not the dry, crumbly, sad gluten-free loaf you politely toast and drown in butter…but I do still recommend slathering a slice with butter!
I mean real brown bread. Rustic. Slightly sweet. Tender crumb. Sliceable. Toastable. Worth repeating.

And then I did what any gluten-free personal chef would do — I upgraded it.

Blended cottage cheese.

Yes. Stay with me.

This Gluten-Free Protein Brown Bread is a modern take on classic Irish brown bread — but lighter, higher in protein, and secretly better for you. It’s quick bread style, no yeast, no waiting, no drama.

Just mix. Bake. Slice. Enjoy.

This gluten-free protein brown bread is moist, hearty, and easy to make. Made with blended cottage cheese for hidden protein and tender texture.

Why This Bread Works

  •  Naturally higher protein (thank you, cottage cheese)
  • Quick bread — no yeast required
  • Moist, tender crumb
  • Slightly sweet, perfectly balanced
  • Toasts beautifully
  • Perfect for breakfast or soup dunking

The All-Star Ingredient: Blended Cottage Cheese

Before you panic — no, it doesn’t taste like cottage cheese.

When blended smooth, cottage cheese becomes creamy, neutral, and protein-packed. It adds:

  • Moisture
  • Structure
  • Extra protein
  • A soft interior texture
Quick • High Protein • Irish-Inspired

A Modern Irish-Inspired Twist

Traditional Irish brown bread relies on whole wheat flour for texture and structure.

This version?

  • Gluten free flour blend
  • Protein boost from cottage cheese
  • Balanced sweetness
  • Still rustic, still comforting

It honors the classic — but makes it work for gluten free kitchens and bellies.

A Modern Irish-Inspired Twist on brown bread

Texture + Flavor

  • Light sweetness
  • Soft interior
  • Nutty flavor from the flax
  • Crisp golden crust
  • Incredible toasted

I always serve it with salted butter. But top it with smashed avocado. Serve alongside stew. Use it for breakfast toast.

Chef Tip: Let it cool completely before slicing if you want clean cuts.

Instructions

  1. Preheat your oven to 350 degrees. Line a loaf baking pan with parchment paper and set a side.
  2. In a large bowl, combine the gluten free flour, flax seeds, baking powder, baking soda and salt. Set aside.
  3. Using a stand blender or hand immersion blender, blend the cottage cheese and eggs together until smooth. Pour this into the dry mixture bowl. Add in the honey or sugar and melted coconut oil.
  4. Using a rubber spatula, mix to combine until everything is fully incorporated and you can’t see any dry ingredients anymore (The bread dough will be very thick)
  5. Add the dough into your prepared loaf pan. Place the butter pieces around the top of the dough.
  6. Bake for 35 minutes or until the middle is set and a toothpick comes out clean – the top should be lightly brown.
  7. Remove from the oven and let cool on a wire rack. It’s best to let it cool completely before you slice into.

Notes

  1. Once completely cooled, you can freeze the whole loaf. Wrap tightly in foil or plastic wrap and then placed in a ziploc bag. Thaw on your countertop  before slicing into.
