A new and simple way to combine shishito peppers that cook in 5 minutes with tender ground beef pieces!

- 6 oz. shishito peppers
- 1 lb. ground beef
- 1 heaping tablespoon tapioca flour
- 1/2 teaspoon each salt and pepper
- 1/2 teaspoon chili flakes
- 2 heaping tablespoons high quality peanut butter
- 1/4 cup roasted and salted peanuts
- 1/3 cup sweet chili sauce
- 1 scallion, chopped
Instructions
- Heat up a heavy duty skillet over high heat. When the pan is very hot, toss in the shishito peppers. Let them sit for 4 minutes before turning over or mixing around.
- Meanwhile, combine the ground beef with the tapioca flour, salt and pepper. Toss with your hands or wooden spoon to combine. Let sit.
- Toss the shishito peppers around after the first side is toasted brown. Cook for an additional 1-2 minutes. Remove the peppers from the skillet to your serving plate or platter.
- Add the ground beef to the hot pan. Spread out quickly into a large burger size patty. Cook for 6 minutes.
- Carefully flip the patty over. Using a spatula or wooden spoon, break the patty up into large 2 inch pieces, while continuing to cook the meat. Cook until it is fully cooked. Turn the heat off.
- Drain off any fat from the pan.
- Add in the chili flakes, peanut butter, peanuts, sweet chili sauce, scallions and shishito peppers to the pan. Toss around to coat everything with the sauce. Serve immediately.
