- 11 tablespoons butter, divided in half, room temperature
- 1 1/2 cups packed brown sugar
- 2 large eggs, room temperature
- 2 teaspoon vanilla paste or extract
- 1 3/4 cup gluten free flour blend
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup chocolate chips, plus more for topping
- (If desired) 1/2 cup butterscotch chips for topping
Instructions
- Preheat your oven to 350F. Place parchment paper in a 13×6 baking pan and set aside.
- In a small saucepan, melt 5 1/2 tablespoons of butter. Swirl around and cook until it is toasted brown. Add in the brown sugar. Quickly stir to combine. Make sure not to burn it and remove it right away from the stove.
- Using a mixing bowl, combine the browned butter, brown sugar and the remaining room temperature butter. Mix with a rubber spatula or wooden spoon until combine. Add in the eggs, one at a time. Mix until everything is just combined. Stir in the vanilla.
- Add the flour, baking powder and baking soda to the butter and sugar bowl. Stir until just combined. Stir in 1 cup chocolate chips.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 15-18 minutes or until the center is cooked through. Remove from the oven. Sprinkle some chocolate chips and butterscotch chips on top (if desired) and cool on a wire rack. Cut into bars and serve.
