Description

Tender chicken with the best rub all charred on the grill.


Ingredients

Scale
  • 68 boneless skinless chicken thighs
  • 2 tablespoons honey
  • 1 heaping tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • zest of 1 lime – save the lime for garnish and juice at the end
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. Heat your grill to high heat.
  2. On a sheet pan or cutting board, arrange the chicken thighs on a single layer. Drizzle the honey all over the thighs.
  3. Combine the remaining ingredients and sprinkle on both sides of the chicken thighs – use up all the spice blend.
  4. When your grill is hot, place the thighs around your grill in a single layer. Grill on the first side for 4-5 minutes. Flip over and cook for another 4-5 minutes or until the thighs are just cooked thought. Remove from the grill and let rest.
  5. Garnish with a squeeze of lime juice. Serve warm.
